Understanding Ground Beef Color

If your ground beef looks gray in the middle, there’s likely no need to throw it out. Meat contains oxymyoglobin, which produces the bright red color when exposed to oxygen. When ground beef appears gray in the middle, it probably just hasn’t been exposed to oxygen yet.

When to Toss Ground Beef

If the outside of your ground beef appears gray or brown, or if most of the meat is that color, it’s safer to discard it. Additionally, if the meat smells off or funky, it’s likely spoiled and should be thrown away.
